  • 4 (6-ounce) salmon fillets, skin-on or skinless
  • 1/4 cup honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Fresh parsley or dill, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Pat salmon fillets completely dry with paper towels and place them on a parchment-lined baking sheet.
  2. In a small bowl, whisk together honey, Dijon mustard, whole-grain mustard, olive oil, minced garlic, lemon juice, smoked paprika, salt, and pepper until smooth.
  3. Reserve about two tablespoons of the sauce for serving. Generously brush or spoon the remaining sauce over the top and sides of each salmon fillet.
  4. Bake for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork, and the glaze is bubbly and caramelized at the edges.
  5. Let the salmon rest for 2-3 minutes. Drizzle with the reserved sauce, garnish with fresh herbs if desired, and serve immediately.

Notes

Always pat the salmon dry before applying the glaze to ensure it adheres and caramelizes properly. Do not skip reserving some fresh sauce for drizzling after baking, as it adds a bright flavor contrast. For a spicier version, add a pinch of cayenne pepper to the glaze.
