This easy Hobo Casserole is the ultimate one-pan comfort food. Tender potatoes, savory beef, and a creamy sauce make a family-friendly dinner everyone loves.

  • 1 ½ pounds lean ground beef (85/15 or 90/10)
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (smoked or sweet)
  • 6 cups peeled and thinly sliced russet potatoes (about 3 large)
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet over medium-high heat, cook the ground beef, breaking it up, until no longer pink. Add the diced onion and cook for 4-5 minutes until softened.
  3. Stir in the garlic, salt, pepper, and paprika. Cook for 1 minute until fragrant. Drain any excess grease.
  4. Spread the cooked beef mixture evenly in the prepared baking dish. Arrange the thinly sliced potatoes in an even layer over the beef.
  5. In a medium bowl, whisk together the condensed cream of mushroom soup and beef broth until smooth. Pour this mixture evenly over the potatoes and beef.
  6. Cover the dish tightly with aluminum foil. Bake for 40 minutes.
  7. Carefully remove the foil. Sprinkle the shredded cheddar cheese evenly over the top.
  8. Return the casserole to the oven, uncovered, for 10-15 minutes, or until the cheese is bubbly and golden and the potatoes are fork-tender.
  9. Let the casserole stand for 5-10 minutes before serving. Garnish with fresh parsley if desired.

Notes

For thinner potato slices, use a mandoline. Drain the beef well to prevent a greasy casserole. Letting the casserole rest before serving allows the sauce to thicken. For a dairy-free version, omit the cheese or use a vegan alternative.
