This Cheesy Baked Cowboy Dip Recipe is the ultimate party appetizer. A creamy, cheesy base loaded with seasoned ground beef, corn, and zesty tomatoes, all baked to bubbly perfection. Perfect for game days, holidays, or any gathering where you want a crowd-pleasing dip that disappears fast.

  • 1 pound ground beef (80/20 blend works well)
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 (10-ounce) can diced tomatoes with green chilies (like Rotel), drained
  • 1 ½ cups shredded cheddar cheese, divided
  • 1 (15-ounce) can corn, drained (or 1 ½ cups frozen corn, thawed)
  • 1 packet (1 ounce) ranch seasoning mix
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 4 green onions, thinly sliced, plus more for garnish
  • Tortilla chips, for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9-inch oven-safe skillet or a 2-quart baking dish.
  2. In a large skillet over medium-high heat, cook the ground beef, breaking it up with a spoon, until it is browned and cooked through. Drain off any excess grease.
  3. In a large mixing bowl, combine the softened cream cheese, sour cream, drained diced tomatoes with green chilies, 1 cup of the shredded cheddar cheese, drained corn, ranch seasoning, garlic powder, and onion powder. Stir until everything is well combined.
  4. Add the cooked ground beef and the sliced green onions to the cream cheese mixture. Stir until the beef is evenly distributed throughout the dip.
  5. Transfer the dip mixture to your prepared baking dish. Spread it into an even layer. Top with the remaining ½ cup of shredded cheddar cheese.
  6. Bake for 20-25 minutes, or until the dip is hot and bubbly around the edges and the cheese on top is melted and lightly golden.
  7. Carefully remove the dip from the oven. Let it rest for about 5 minutes before garnishing with additional sliced green onions. Serve immediately with plenty of tortilla chips for dipping.

Notes

Letting the dip rest for a few minutes after baking allows it to set slightly, making it easier to scoop without being too runny. For a lighter version, use ground turkey and low-fat cream cheese and sour cream. You can assemble the dip a day in advance and bake when ready.
