  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 1/3 cup honey
  • 1/3 cup Dijon mustard
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons olive oil or melted butter
  • 2 cloves garlic, minced
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a medium bowl, whisk together honey, both mustards, olive oil, garlic, vinegar, paprika, onion powder, thyme, and pepper. Taste and add salt.
  3. Pat chicken dry and place in the baking dish in a single layer. Pour about two-thirds of the sauce over the chicken, turning to coat. Reserve remaining sauce.
  4. Bake for 20 minutes. Remove dish and spoon reserved sauce over the chicken.
  5. Return to oven and bake for an additional 5-10 minutes, or until chicken reaches 165°F internally.
  6. Let rest for 5 minutes before serving. Garnish with fresh herbs if desired.

Notes

For juicier results, use chicken thighs. Do not skip patting the chicken dry, as this helps the sauce adhere. Avoid overcrowding the pan. Leftovers can be refrigerated for 3-4 days or frozen for up to 3 months.
