  • 1 large seedless watermelon, sliced into 1-inch thick rounds
  • 8 ounces cream cheese, softened
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime juice
  • 1 cup fresh blueberries
  • 1 cup sliced strawberries
  • 1 cup diced mango
  • 1/2 cup toasted coconut flakes
  • 1/4 cup fresh mint leaves, thinly sliced
  • 2 tablespoons lime zest

Instructions

  1. In a medium bowl, beat the softened cream cheese with honey, vanilla extract, and lime juice until smooth and creamy, about 2 minutes with a hand mixer.
  2. Cut off both ends of the watermelon so it sits flat. Slice the watermelon into rounds about 1 inch thick. Pat each slice dry with a paper towel to remove excess moisture.
  3. Place each watermelon round on a serving platter. Spread a generous layer of the cream cheese mixture over the top, leaving a small border around the edge.
  4. Arrange blueberries, strawberries, and mango on top of the cream cheese. Sprinkle with toasted coconut, fresh mint, and lime zest.
  5. Refrigerate the assembled slices for at least 10 minutes before serving. Cut each round into wedges like a pizza and serve immediately.

Notes

For a dairy-free version, use cashew cream or coconut yogurt instead of cream cheese. For lower sugar, skip the honey and rely on fruit sweetness. Pat the watermelon slices dry to prevent the cream cheese from sliding off. Best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 24 hours.
