These skewers are the ultimate refreshing summer party food. Cool, crisp watermelon pairs with salty, creamy feta, brightened with mint and a tangy lime-honey drizzle. They are simple, elegant, and ready in just 20 minutes.

Ingredients

  • 1 small seedless watermelon (about 5-6 pounds), rind removed, cut into 1-inch cubes
  • 8 ounces block feta cheese, cut into 3/4-inch cubes
  • 1 large English cucumber, cut into 1/2-inch thick rounds or half-moons
  • 1/4 cup fresh mint leaves, roughly chopped or torn
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lime juice (or lemon juice)
  • 1 tablespoon honey or maple syrup
  • Freshly cracked black pepper, to taste
  • Flaky sea salt (like Maldon), for finishing
  • Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes first)

Instructions

  1. Pat the watermelon cubes and cucumber pieces dry with a clean kitchen towel or paper towels. This helps the dressing adhere.
  2. In a small bowl or jar, whisk together the olive oil, lime juice, and honey until well combined to make the dressing.
  3. Thread the components onto the skewers in a repeating pattern, such as watermelon, cucumber, feta. Do not pack them too tightly. Place finished skewers on a serving platter.
  4. Just before serving, drizzle the dressing lightly over the arranged skewers. Sprinkle with fresh mint, cracked black pepper, and a pinch of flaky sea salt.

Notes

For best results, use a block of feta and cube it yourself; pre-crumbled feta is too dry. Assemble and dress the skewers right before serving to prevent them from becoming soggy. Components can be prepped and stored separately in the fridge up to a day ahead.
