A quick and healthy weeknight dinner where everyone builds their own edible boats. Savory spiced turkey filling is served in crisp lettuce leaves with fresh toppings for a fun, light meal.

Ingredients

  • 1 tablespoon olive oil or avocado oil
  • 1 pound lean ground turkey (93/7)
  • 1 small yellow onion, finely diced
  • 1 bell pepper (any color), finely diced
  • 3 cloves garlic, minced
  • 1 packet (about 2 tablespoons) taco seasoning, or 2 tablespoons homemade blend
  • 1/2 cup tomato sauce or crushed tomatoes
  • 1/4 cup water
  • 1 head of butter lettuce, romaine hearts, or iceberg lettuce, leaves separated and washed
  • Salt and black pepper to taste
  • For Serving: diced avocado, pico de gallo, shredded cheese, sour cream, fresh cilantro, lime wedges, pickled jalapeƱos

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add diced onion and bell pepper. Cook for 5-6 minutes until softened.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add ground turkey to the skillet. Break it up with a spoon and cook for 5-7 minutes until no longer pink. Season with salt and pepper.
  4. Sprinkle taco seasoning over the turkey mixture. Stir to coat evenly.
  5. Pour in tomato sauce and water. Stir, reduce heat to medium-low, and simmer for 3-5 minutes until flavors meld and sauce thickens slightly.
  6. While filling simmers, pat lettuce leaves dry with a towel. Arrange leaves on a platter and prepare topping bowls.
  7. Spoon warm turkey filling into lettuce leaves. Let everyone top with their favorite additions and enjoy immediately.

Notes

Pat lettuce leaves completely dry to prevent sogginess. Do not overfill the leaves for easier eating. The turkey filling can be made ahead and stored in the fridge for 3-4 days or frozen for up to 3 months.
