Ingredients

Scale
  • 1 pineapple, cut into spears and chunks
  • 2 mangoes, sliced
  • 1 star fruit, sliced
  • 3 kiwis, peeled and sliced into rounds
  • 1 cup fresh coconut chunks
  • 2 passion fruits, halved
  • 1 cup strawberries, hulled
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 lime, cut into wedges
  • 4 oz prosciutto or serrano ham, thinly sliced
  • 1 wheel (8 oz) brie or goat cheese
  • 1 block (6 oz) sharp aged cheddar, sliced
  • 1 cup marinated mozzarella balls
  • 2 cups plantain chips
  • 1 baguette, sliced and toasted
  • 1 box water crackers
  • 1 cup guacamole or mango salsa
  • 3 oz dark chocolate, broken into chunks
  • 2 tbsp honey or agave syrup
  • 1/2 cup candied macadamia nuts
  • Fresh mint or basil sprigs, for garnish
  • Edible flowers, for garnish (optional)

Instructions

  1. Place small bowls or ramekins for dips (like guacamole) onto a large wooden board or platter to anchor the layout.
  2. Arrange the cheeses (brie, cheddar, mozzarella balls) in different sections of the board. Cut a few wedges or slices into the brie and cheddar to make them easy to serve.
  3. Fold or roll the prosciutto slices and place them near the cheeses, creating little piles with height.
  4. Add the tropical fruits and berries in generous, colorful groups. Fill larger gaps with pineapple, mango, kiwi, and berry clusters.
  5. Scatter the plantain chips, toasted baguette slices, water crackers, dark chocolate chunks, and candied nuts into all remaining spaces to create an abundant, full look.
  6. Garnish with fresh herb sprigs and lime wedges. Drizzle honey over one of the cheeses for a final touch. Serve immediately.

Notes

For a dairy-free board, use a vegan cashew cheese. To prevent browning, slice fruits just before assembling. Keep crackers in a separate bowl if the board will sit out in humidity to maintain crispness.
