These irresistible meatball bites are the perfect party appetizer. Tender, juicy meatballs are coated in a sticky, glossy sauce with a perfect balance of sweet fruitiness and a gentle spicy kick. They are easy to make and disappear fast from any platter.

  • 1 lb ground beef (85/15 blend)
  • 1/2 cup plain breadcrumbs
  • 1/3 cup finely grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 cup apricot preserves
  • 1/3 cup chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sriracha, or more to taste
  • 1 tsp freshly grated ginger
  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, 2 cloves minced garlic, oregano, onion powder, salt, and pepper. Mix gently with hands until just combined.
  3. Shape mixture into 1-inch balls and place them 1 inch apart on the prepared baking sheet.
  4. Bake for 15-18 minutes, or until cooked through and browned.
  5. While meatballs bake, make the sauce. In a medium saucepan, whisk together apricot preserves, chili sauce, soy sauce, vinegar, sriracha, ginger, and 1 clove minced garlic.
  6. Bring sauce to a gentle simmer over medium heat. Reduce heat to low and simmer for 5-7 minutes, stirring occasionally, until slightly thickened and glossy.
  7. Transfer the baked meatballs directly into the saucepan with the sauce. Gently toss to coat.
  8. Let the meatballs simmer in the sauce on low for an additional 2-3 minutes to combine flavors. Serve warm with toothpicks.

Notes

For a stickier glaze, broil sauced meatballs for 1-2 minutes after combining. Meatball mixture can be made a day ahead. Use ground turkey or chicken for a leaner option. Adjust sriracha to control heat level.
