This dazzling dessert is an easy, nostalgic treat that looks and tastes extravagant. A simple box cake is soaked with fruity gelatin for incredible moisture, then topped with whipped cream for a perfect potluck or party cake.

  • 1 box (15.25 oz) white or yellow cake mix, plus ingredients listed on box (eggs, oil, water)
  • 1 box (3 oz) strawberry flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container (8 oz) frozen whipped topping, thawed
  • Fresh strawberries, for garnish (optional)

Instructions

  1. Prepare and bake the cake mix according to package directions in a 9×13 inch baking pan. Let cool completely in the pan on a wire rack.
  2. In a medium bowl, dissolve the strawberry gelatin in the boiling water, stirring for 2 minutes until no granules remain. Stir in the cold water.
  3. Use the handle of a wooden spoon or a chopstick to poke holes all over the top of the cooled cake, about 1 inch apart and 3/4 of the way deep.
  4. Slowly and evenly pour the liquid gelatin over the cake, aiming for the holes. Allow it to soak in.
  5. Cover the pan loosely with plastic wrap and refrigerate for at least 4 hours, or overnight.
  6. Before serving, spread the thawed whipped topping evenly over the cake. Garnish with fresh strawberry slices if desired.

Notes

Ensure the cake is completely cool before poking and adding gelatin to prevent sogginess. The cake must chill for at least 4 hours for the gelatin to set properly. For variations, try different cake mix and gelatin flavors. Store covered in the refrigerator for 3-4 days.
