  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup apricot jam or orange marmalade
  • 1 tablespoon water
  • 3-4 cups assorted fresh fruit (e.g., strawberries, kiwi, blueberries, raspberries, mandarin oranges)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. For the crust: In a large bowl, cream softened butter and 1 cup sugar until light and fluffy. Beat in egg and 1 tsp vanilla.
  3. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to wet ingredients, mixing until just combined.
  4. Press dough evenly into a 12-inch pizza pan or parchment-lined baking sheet to form a 1/4-inch thick circle.
  5. Bake for 15-18 minutes until edges are light golden. Cool completely on a wire rack.
  6. For the cream cheese layer: Beat softened cream cheese, 1/3 cup sugar, and 1 tsp vanilla until smooth and creamy.
  7. Once crust is cool, spread cream cheese mixture evenly over the top, leaving a small border.
  8. Arrange washed and dried sliced fruit on top in your desired pattern.
  9. In a microwave-safe bowl, combine jam and water. Heat for 20-30 seconds until runny. Brush glaze over fruit.
  10. Refrigerate assembled pizza for at least 30 minutes before slicing and serving.

Notes

Ensure crust is completely cool before adding cream cheese to prevent melting. Dry fruit thoroughly to avoid a soggy crust. The glaze adds shine and helps keep fruit fresh. For make-ahead, bake and cool the crust a day in advance.
