A bright and cheerful smoothie that tastes like summer in a glass. It combines sweet strawberries and zesty lemon for a refreshing, protein-packed breakfast or snack that comes together in just minutes.

Ingredients

  • 1 cup frozen strawberries
  • 1/2 cup plain Greek yogurt
  • 1/2 cup fresh lemon juice (from 2-3 large lemons)
  • 1 tablespoon honey or maple syrup
  • 1/2 cup cold water or coconut water
  • 1/2 teaspoon pure vanilla extract
  • Handful of ice cubes (optional)

Instructions

  1. Juice the lemons to yield 1/2 cup of fresh lemon juice.
  2. Add all ingredients to a high-speed blender.
  3. Blend on low, then gradually increase to high speed for 45-60 seconds until completely smooth and creamy.
  4. Taste and adjust sweetness or tartness if needed by adding more honey or lemon juice.
  5. Pour into a glass and enjoy immediately.

Notes

For meal prep, portion frozen strawberries into individual freezer bags. In the morning, add the bag contents to the blender with the remaining fresh ingredients. Always use fresh lemon juice for the best flavor. For a dairy-free version, use plant-based yogurt and maple syrup.
