Ingredients

Scale
  • 1 pound short pasta, like fusilli or rotini
  • 1 pint cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 red onion, finely diced
  • 1 cup pitted black olives, halved
  • 1 cup cubed mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 3/4 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Bring a large pot of well-salted water to a boil. Cook pasta according to package directions until al dente. Drain and rinse briefly under cool water. Let drain well.
  2. While pasta cooks, make the dressing. In a small bowl or jar, whisk together olive oil, red wine vinegar, minced garlic, Dijon mustard, dried oregano, salt, and pepper until emulsified and creamy.
  3. In a large mixing bowl, combine the cooled pasta, halved tomatoes, diced cucumber, diced bell peppers, red onion, olives, mozzarella, and Parmesan.
  4. Pour about three-quarters of the dressing over the pasta mixture. Gently toss until everything is evenly coated.
  5. Taste and add more dressing, salt, or pepper as needed. Let the salad rest for at least 15 minutes before serving to allow the flavors to meld.

Notes

For best results, cook pasta al dente and salt the boiling water generously. The salad can be made ahead and stored in the refrigerator for up to 4 days. For a gluten-free version, use gluten-free pasta. For a dairy-free option, omit the cheeses.
