This vibrant salad is a celebration of spring and summer. It features sweet strawberries, tender spinach, creamy feta, and crunchy almonds, all brought together with a tangy poppy seed dressing. It’s a refreshing and complete meal that is both simple and deeply satisfying.

  • 6 cups fresh baby spinach, washed and dried
  • 1 pint fresh strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup sliced almonds, toasted
  • 1/4 small red onion, very thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon poppy seeds
  • 1/4 teaspoon kosher salt
  • Pinch of black pepper

Instructions

  1. Make the dressing by whisking together the olive oil, vinegar, honey, Dijon mustard, poppy seeds, salt, and pepper in a small bowl or jar until fully emulsified.
  2. Toast the sliced almonds in a dry skillet over medium heat for 3-5 minutes until fragrant and golden. Set aside to cool.
  3. Prepare the salad components: ensure spinach is dry, slice strawberries, and thinly slice red onion.
  4. In a large serving bowl, add the spinach and about two-thirds of the dressing. Toss gently until every leaf is lightly coated.
  5. Top the dressed spinach with the sliced strawberries, crumbled feta, toasted almonds, and red onion.
  6. Drizzle the remaining dressing over the top and serve immediately.

Notes

For best results, dry spinach thoroughly to prevent a soggy salad. Dress the spinach first before adding toppings to keep berries and nuts crisp. Dressing can be made up to 3 days ahead.
