This vibrant salad is the ultimate summer side dish. Sweet strawberries, tender spinach, salty feta, and crunchy almonds come together with a tangy poppy seed dressing for a celebration on a plate. It’s fresh, quick, and perfect for warm evenings.

Ingredients

  • 6 ounces (about 6 cups) fresh baby spinach, thoroughly dried
  • 1 pound fresh strawberries, hulled and sliced
  • 4 ounces crumbled feta cheese
  • 1/2 cup sliced almonds or pecans
  • 1/4 small red onion, very thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar or white balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon poppy seeds
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Place the thoroughly dried spinach in a large salad bowl.
  2. In a small jar, combine the olive oil, vinegar, honey, Dijon mustard, poppy seeds, salt, and pepper. Seal and shake vigorously until emulsified.
  3. Add the sliced strawberries, crumbled feta, sliced almonds, and red onion to the bowl with the spinach.
  4. Drizzle about half of the dressing over the salad. Gently toss until everything is lightly coated. Add more dressing as needed.
  5. Serve immediately, garnished with extra nuts or poppy seeds if desired.

Notes

Crucially dry the spinach after washing to prevent a soggy salad. Slice strawberries just before assembling. For a milder onion flavor, soak slices in ice water for 10 minutes. Store leftovers undressed for up to 1 day.
