  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper
  • 5 oz fresh baby spinach
  • 1 lb fresh strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup sliced almonds, toasted
  • 1/4 small red onion, very thinly sliced
  • 1/3 cup extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • 1 small clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Season and cook the chicken. Pat chicken dry, then rub with 1 tbsp olive oil, garlic powder, oregano, salt, and pepper. Cook in a skillet over medium-high heat for 6-7 minutes per side until internal temperature reaches 165°F. Transfer to a cutting board and let rest for 5 minutes.
  2. Make the dressing. While chicken cooks, combine 1/3 cup olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper in a small bowl or jar. Whisk or shake vigorously until emulsified.
  3. Assemble the salad. In a large serving bowl, spread the baby spinach. Top with sliced strawberries, red onion, crumbled feta, and toasted almonds.
  4. Slice and serve. Slice the rested chicken against the grain. Arrange over the salad. Drizzle with desired amount of dressing just before serving and toss gently.

Notes

Letting the chicken rest before slicing is crucial for juicy meat. For meal prep, store components separately. Toasting the almonds enhances flavor. For a milder onion, soak slices in ice water for 10 minutes then pat dry.
