  • 2 pounds fresh strawberries, hulled and sliced
  • 1/3 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • For the Cake & Cream Layers:
  • 1 (16 oz) prepared pound cake or angel food cake, cut into 1-inch cubes
  • 2 cups cold heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (8 oz) block full-fat cream cheese, softened to room temperature
  • 1 (7 oz) container marshmallow fluff

Instructions

  1. Macerate the strawberries: In a large bowl, combine sliced strawberries, granulated sugar, lemon juice, and 1 tsp vanilla. Toss gently and let sit at room temperature for at least 1 hour to create a syrupy juice.
  2. Prepare the stabilized cream: In a large mixing bowl, beat the cold heavy cream, powdered sugar, and 1 tsp vanilla until stiff peaks form. In a separate bowl, beat the softened cream cheese and marshmallow fluff until smooth and creamy.
  3. Combine cream layers: Gently fold the whipped cream into the cream cheese mixture until no white streaks remain. Be careful not to overmix.
  4. Assemble the trifle: In a 3-4 quart trifle bowl, create layers. Start with 1/3 of the cake cubes, then 1/3 of the strawberries and their juices, then 1/3 of the cream mixture. Repeat layers two more times, ending with cream.
  5. Chill and set: Cover the trifle tightly with plastic wrap and refrigerate for at least 4 hours, or ideally overnight, to allow the flavors to meld and the layers to set firmly.

Notes

Do not over-whip the cream. Use cold ingredients for best results. The maceration and chilling steps are crucial for flavor and texture. For individual servings, layer in clear glasses. Garnish with fresh strawberries, mint, or toasted nuts just before serving.
