Ingredients

  • 1 large egg yolk, at room temperature
  • 1 tablespoon fresh lime juice
  • 1 teaspoon Dijon mustard
  • 1 cup neutral oil (avocado, grapeseed, or light olive oil)
  • 3 tablespoons Sriracha sauce
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons finely chopped fresh cilantro or chives
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. In a medium bowl, whisk the egg yolk, lime juice, Dijon mustard, and salt until pale and slightly thickened.
  2. While whisking constantly, add the oil drop by drop for the first 1/4 cup until the mixture emulsifies and thickens.
  3. Once stable, continue whisking while adding the remaining oil in a thin, steady stream.
  4. Whisk in the Sriracha, honey, garlic powder, and chopped herbs until fully combined.
  5. Taste and adjust seasoning with more Sriracha, lime, or salt as desired.

Notes

If the mayo breaks, whisk a fresh egg yolk in a clean bowl and slowly incorporate the broken mixture to re-emulsify. For a shortcut, use 3/4 cup store-bought mayo as the base and whisk in the flavorings. Store in an airtight container in the refrigerator for up to 5 days.
