A creamy, savory, and comforting casserole that pleases the whole family. It features ground beef, egg noodles, and cheese in a rich sauce, all baked together for a fuss-free, one-dish meal. Perfect for busy weeknights and sure to become a regular request.

  • 1 ½ pounds lean ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 1 cup beef broth
  • 1 (12 oz) bag wide egg noodles, uncooked
  • 2 cups shredded cheddar cheese, divided
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, cook ground beef and onion until beef is browned and onion is soft. Drain excess grease. Add garlic and cook for 1 minute. Season with salt and pepper.
  3. Stir in condensed soup, sour cream, beef broth, paprika, and thyme. Simmer for 2-3 minutes.
  4. Transfer beef mixture to a 9×13 inch baking dish. Sprinkle uncooked egg noodles evenly over the top, pressing them down gently into the sauce. Do not stir.
  5. Pour 1 cup of water evenly over the entire dish.
  6. Cover tightly with aluminum foil and bake for 30 minutes.
  7. Remove foil. Sprinkle remaining 2 cups of cheddar cheese evenly over the top.
  8. Return to oven, uncovered, for 10-15 minutes, until cheese is melted and bubbly.
  9. Let casserole rest for 5-10 minutes before serving. Garnish with fresh parsley.

Notes

Letting the casserole rest before serving is crucial for the sauce to set. For a veggie boost, stir in a cup of frozen peas or diced carrots with the sauce. The uncooked noodles must be layered on top, not stirred in, and the extra water is needed for them to cook properly.
