This special easy pasta bake is the ultimate cozy weeknight dinner. It’s a cheesy, saucy, and hearty dish that comes together quickly and reheats beautifully for even better leftovers the next day.

Ingredients

  • 1 pound short pasta (like penne, rigatoni, or rotini)
  • 1 tablespoon olive oil
  • 1 pound ground beef (or Italian sausage)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (24-ounce) jar marinara sauce
  • 1 (15-ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion. Cook until beef is browned and onion is soft, about 7-8 minutes. Drain excess fat.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Stir in marinara sauce, crushed tomatoes, oregano, basil, and red pepper flakes. Season with salt and pepper. Simmer for 10-15 minutes.
  5. Remove skillet from heat. Stir in the cooked pasta and 1 cup of the mozzarella cheese until evenly coated.
  6. Transfer the pasta mixture to a 9×13 inch baking dish. Dollop ricotta cheese evenly over the top. Sprinkle with remaining 1 cup mozzarella and the Parmesan cheese.
  7. Bake for 15-20 minutes, until cheese is melted and bubbly. For a crispier top, broil for the last 1-2 minutes, watching closely.
  8. Let the pasta bake rest for 5-10 minutes before serving. Garnish with fresh herbs.

Notes

Cook pasta al dente as it will soften further in the oven. Taste and season the sauce well before combining with pasta. Letting the bake rest before serving helps it set for neater portions. For a lighter version, use ground turkey or a plant-based crumble.
