Ingredients

Scale
  • 1 pound boneless skinless chicken breasts, sliced thin
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 8 small flour or corn tortillas
  • 1 cup creamy Caesar dressing
  • 2 cups chopped romaine lettuce
  • 1/2 cup shaved Parmesan cheese
  • 1/4 cup croutons, crushed slightly
  • Fresh lemon wedges for serving

Instructions

  1. Slice chicken breasts horizontally to create thin cutlets. Place between plastic wrap and pound to 1/4 inch thickness.
  2. Season chicken with garlic powder, smoked paprika, salt, and pepper.
  3. Heat olive oil in a large cast iron skillet over medium-high heat. Add chicken in a single layer and cook 3 to 4 minutes per side until golden brown and cooked through (165°F internal).
  4. Remove chicken to a cutting board, let rest 2 minutes, then chop into bite-sized pieces. Return chopped chicken to hot skillet for 1 minute to crisp edges.
  5. Warm tortillas over a gas flame or in a dry skillet for 30 seconds per side.
  6. Fill each tortilla with romaine, crispy chicken, Caesar dressing, Parmesan, and crushed croutons. Squeeze fresh lemon over top before serving.

Notes

For best results, do not overcrowd the pan when cooking chicken. Cook in batches if needed. Store leftover components separately for up to 3 days. Reheat chicken in a hot skillet to restore crispiness.
