This slow cooker honey garlic chicken is a weeknight lifesaver. Tender chicken cooks in a sweet, savory, and garlicky glaze that tastes just like your favorite takeout, but is made easily at home with minimal effort.

Ingredients

  • 2 to 2.5 pounds boneless, skinless chicken thighs or breasts
  • 1/2 cup honey
  • 1/3 cup low-sodium soy sauce or tamari
  • 1/4 cup ketchup
  • 6-8 cloves garlic, minced
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • sliced green onions and sesame seeds for garnish

Instructions

  1. Pat the chicken dry with paper towels. Place it in the bottom of a 4 to 6-quart slow cooker.
  2. In a medium bowl, whisk together the honey, soy sauce, ketchup, minced garlic, rice vinegar, sesame oil, and black pepper.
  3. Pour the sauce over the chicken in the slow cooker, stirring gently to coat.
  4. Cover and cook on HIGH for 3-4 hours or on LOW for 6-7 hours, until the chicken is very tender.
  5. Remove the cooked chicken to a plate. Turn the slow cooker to HIGH.
  6. In a small bowl, mix the cornstarch with the cold water until smooth to create a slurry.
  7. Whisk the slurry into the hot sauce in the slow cooker. Cover and cook for 15-20 more minutes until the sauce thickens.
  8. Return the chicken to the pot and stir to coat in the thickened glaze. Serve garnished with green onions and sesame seeds.

Notes

For a gluten-free version, use tamari or coconut aminos. Chicken breasts cook faster than thighs; check them earlier to prevent dryness. The cornstarch slurry is optional but recommended for a thicker, glossier sauce.
