This easy slow cooker recipe delivers maximum flavor with minimal effort. Tender chicken cooks in a sweet, savory, and garlicky sauce for a hands-off family dinner.

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1/2 cup honey
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup ketchup
  • 6-8 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional, for thickening)
  • sliced green onions, for garnish
  • sesame seeds, for garnish

Instructions

  1. Pat the chicken dry with paper towels. Place it in the bottom of a 4-6 quart slow cooker.
  2. In a medium bowl, whisk together the honey, soy sauce, ketchup, minced garlic, rice vinegar, sesame oil, ginger, and black pepper.
  3. Pour the sauce evenly over the chicken in the slow cooker. Gently stir to coat.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is tender and cooked through.
  5. For a thicker sauce, carefully remove the cooked chicken to a plate. Whisk the cornstarch slurry into the hot liquid in the slow cooker. Cover and cook on HIGH for 15-20 minutes until thickened. Return the chicken to the pot and stir to coat.
  6. Shred or slice the chicken. Serve with the sauce, garnished with green onions and sesame seeds.

Notes

For a gluten-free version, use tamari or coconut aminos. Chicken thighs stay juicier than breasts. Do not overcook. Fresh garlic is recommended over jarred. The sauce can be thickened for a glossier finish.
