  • 2 lbs lean ground beef (90/10)
  • 1 large egg
  • 1/2 cup plain breadcrumbs
  • 1/4 cup finely minced yellow onion
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 1/2 cups BBQ sauce
  • 1/2 cup low-sodium beef broth
  • 1/4 cup apple cider vinegar
  • 2 tbsp honey or pure maple syrup
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder

Instructions

  1. In a large bowl, gently combine ground beef, egg, breadcrumbs, onion, garlic, smoked paprika, salt, and pepper. Do not overmix.
  2. Roll the mixture into 1 to 1.5-inch balls, making about 24-28 meatballs. Lightly wet hands to prevent sticking.
  3. In the slow cooker insert or a separate bowl, whisk together BBQ sauce, beef broth, apple cider vinegar, honey, Worcestershire sauce, and onion powder until smooth.
  4. Place the formed meatballs into the sauce in the slow cooker. Gently spoon sauce over them to coat.
  5. Cover and cook on LOW for 4 hours. Serve warm.

Notes

For gluten-free, use certified gluten-free breadcrumbs and sauces. For a lighter option, use ground turkey or chicken. Avoid overmixing the meat and cooking on HIGH to prevent tough meatballs. Store leftovers in an airtight container for up to 4 days.
