A one-pan wonder that combines the fun flavors of taco night with hearty rice and lean ground turkey. This family-friendly meal is ready in about 30 minutes, making it a perfect solution for busy weeknights.   • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 medium yellow onion, diced
  • 1 bell pepper (any color), diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice (uncooked)
  • 1 1/2 cups low-sodium chicken broth
  • 1 (10 oz) can diced tomatoes with green chiles (like Rotel), undrained
  • 2 tablespoons taco seasoning
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • 1 cup shredded cheddar or Mexican blend cheese
  • For serving: fresh cilantro, diced avocado, sour cream, lime wedges

Instructions

  1. Heat olive oil in a large, deep skillet over medium-high heat. Add ground turkey and cook, breaking it apart, until no longer pink (5-7 minutes).
  2. Add diced onion and bell pepper to the skillet. Cook for 4-5 minutes until softening. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Add uncooked rice to the skillet. Stir constantly for 2 minutes to toast the grains. Sprinkle in taco seasoning, cumin, smoked paprika, salt, and pepper. Stir to coat everything.
  4. Pour in chicken broth and the entire can of undrained diced tomatoes with green chiles. Stir well, scraping up browned bits. Bring to a boil, then immediately reduce heat to low. Cover tightly with a lid.
  5. Simmer, covered, for 15-18 minutes. Do not lift the lid. Check if rice is tender and liquid is absorbed. If needed, add a splash more broth.
  6. Remove from heat. Sprinkle shredded cheese evenly over the top. Cover again for 2-3 minutes to let the cheese melt.
  7. Fluff the rice with a fork, gently mixing in the melted cheese. Serve immediately with desired toppings.

Notes

Do not lift the lid while the rice simmers. Toasting the rice before adding liquid is key for flavor. For a vegetarian version, swap turkey for two cans of rinsed black beans. Store leftovers in an airtight container for up to 4 days.
