A vibrant, one-skillet meal where sizzling chicken and peppers are served over lime rice. It’s a customizable family dinner that delivers classic fajita flavor without the fuss of wraps or a sheet pan.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into strips
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large yellow onion, sliced
  • 2 tablespoons olive oil
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1.5 cups long-grain white rice, rinsed
  • 3 cups chicken broth
  • Juice of 1 lime
  • Fresh cilantro, chopped, for garnish
  • Toppings: avocado, shredded cheese, sour cream, salsa, jalapeƱos

Instructions

  1. Mix chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, and black pepper in a small bowl to create the fajita seasoning.
  2. In a large skillet or Dutch oven, bring chicken broth to a simmer over medium-high heat. Stir in rinsed rice, reduce heat to low, cover, and cook for 15-18 minutes until liquid is absorbed and rice is tender. Remove from heat, fluff with a fork, and stir in lime juice. Transfer to a bowl and cover.
  3. In the same skillet, heat olive oil over medium-high heat. Add chicken strips in a single layer and sprinkle with half the fajita seasoning. Cook for 5-7 minutes, stirring occasionally, until golden and cooked through. Remove chicken to a plate.
  4. Add sliced peppers and onion to the skillet. Sprinkle with remaining seasoning. Cook for 6-8 minutes, stirring occasionally, until tender-crisp with charred edges.
  5. Return cooked chicken to skillet with veggies and toss everything together for 1 minute to combine.
  6. To serve, spoon lime rice into bowls, top with chicken fajita mixture, and garnish with cilantro. Let everyone add their favorite toppings.

Notes

For best results, do not overcrowd skillet when cooking chicken. Cook in batches if needed. Store components separately for easy meal prep. For a vegetarian version, use black beans or tofu.
