This easy, nostalgic dessert transforms a simple box cake into a moist, flavor-infused treat. Poking holes in the warm cake allows colorful gelatin to seep deep into every bite, creating a vibrant and joyful cake perfect for any celebration or potluck.

  • 1 box (15.25 oz) white or yellow cake mix
  • Ingredients listed on cake mix box (eggs, oil, water)
  • 1 box (3 oz) flavored gelatin (e.g., strawberry, lime, orange, berry blue)
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container (8 oz) frozen whipped topping, thawed
  • Optional garnishes: fresh berries, sprinkles, or citrus zest

Instructions

  1. Prepare and bake the cake mix according to package directions in a 9×13 inch baking dish. Let cool on a wire rack for 10-15 minutes; it should still be warm.
  2. Using the handle of a wooden spoon or a large straw, poke holes all over the warm cake, spacing them about 1 inch apart and going to the bottom.
  3. In a medium bowl, dissolve the gelatin powder completely in the boiling water, stirring for 2 full minutes. Stir in the cold water.
  4. Slowly pour the liquid gelatin mixture over the warm cake, aiming to fill the holes. Allow it to soak in; some pooling on the surface is fine.
  5. Refrigerate the cake, uncovered, for at least 4 hours or overnight.
  6. Just before serving, spread the thawed whipped topping evenly over the chilled cake. Add optional garnishes, slice, and serve.

Notes

The cake must be warm when poked for the gelatin to soak in properly. For best results, chill the cake for the full 4+ hours before frosting. This cake can be made a day ahead; add the whipped topping just before serving.
