  • 1 roll (16.5 oz) refrigerated sugar cookie dough
  • 1/4 cup all-purpose flour (for dusting)
  • 8 oz cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon pure vanilla extract
  • 2 cups powdered sugar
  • 2-3 cups assorted fresh seasonal fruit (strawberries, blueberries, kiwi, etc.)
  • 1/4 cup apricot jam or apple jelly (optional, for glaze)

Instructions

  1. Preheat oven to 350°F. Press cookie dough evenly into a 12-inch pizza pan or parchment-lined baking sheet to form a 1/4-inch thick circle. Bake for 10-12 minutes until edges are light golden. Cool completely.
  2. Beat softened cream cheese and butter with an electric mixer until smooth and creamy, about 2 minutes.
  3. Beat in vanilla extract. Gradually add powdered sugar, beating until frosting is light and fluffy.
  4. Spread frosting evenly over the cooled crust, leaving a small border.
  5. Arrange washed, dried, and sliced fruit in a decorative pattern on top of the frosting.
  6. Optional: Warm jam in microwave for 15-20 seconds until liquid. Gently brush over fruit for a glossy glaze.
  7. Refrigerate the assembled pizza for at least 1 hour before slicing and serving.

Notes

Ensure crust is completely cool before adding frosting to prevent sogginess. Let cream cheese and butter soften at room temperature for lump-free frosting. Chill before slicing for clean cuts. Fruit can be customized based on season.
