  • 1 pound bulk breakfast sausage (mild or spicy)
  • 1 (30 oz) bag frozen shredded hash browns, thawed
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cups shredded sharp cheddar cheese, divided
  • 8 large eggs
  • 1 1/2 cups whole milk
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray or butter for greasing

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook sausage, breaking it up, until no longer pink. Add diced onion and bell pepper and cook for 5-7 minutes until softened. Drain excess grease.
  3. Spread thawed hash browns in an even layer in the prepared baking dish. Top evenly with the sausage and veggie mixture. Sprinkle 1 cup of the shredded cheese over the top.
  4. In a large bowl, whisk eggs, milk, and sour cream until smooth. Whisk in garlic powder, smoked paprika, thyme, salt, and pepper. Pour this custard mixture evenly over the layers in the dish.
  5. Sprinkle the remaining 1 cup of cheese over the top. Cover the dish tightly with aluminum foil.
  6. Bake for 40 minutes. Remove foil and bake for an additional 15-20 minutes, until the center is set and the top is golden brown.
  7. Let the casserole rest for 10 minutes before slicing and serving.

Thaw hash browns completely to prevent a soggy casserole. Letting the casserole rest after baking is crucial for clean slices. For a make-ahead option, assemble the casserole, cover, and refrigerate overnight before baking.
