A vibrant and comforting meal where oven roasted vegetables and chickpeas meet fluffy grains, all brought together with a creamy lemon tahini sauce. It is a nourishing, customizable bowl perfect for weeknights or meal prep.

  • 1 medium sweet potato, peeled and cubed
  • 1 bell pepper, sliced
  • 1 small red onion, sliced
  • 1 cup broccoli florets
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup dry quinoa, farro, or brown rice
  • 2 cups water or vegetable broth
  • 1/4 cup tahini
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons warm water
  • 1 tablespoon maple syrup or honey
  • 1 small clove garlic, minced
  • 1/4 teaspoon salt
  • 1/2 avocado, sliced (optional)
  • A handful of fresh parsley or cilantro, chopped (optional)
  • A sprinkle of sesame seeds or crushed nuts (optional)

Instructions

  1. Preheat oven to 425°F (220°C). On a large rimmed baking sheet, toss sweet potato, bell pepper, onion, broccoli, and chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread in a single layer.
  2. Roast vegetables for 25-30 minutes, stirring halfway through, until tender and lightly charred.
  3. While vegetables roast, cook your chosen grain according to package directions using water or broth. Fluff with a fork when done.
  4. In a small bowl, whisk together tahini, lemon juice, 2 tbsp warm water, maple syrup, minced garlic, and 1/4 tsp salt until smooth and creamy. Add more water to thin if desired.
  5. Divide cooked grain among bowls. Top with roasted vegetables and chickpeas. Drizzle generously with tahini sauce and add optional toppings like avocado, herbs, and seeds.

Notes

Do not crowd the baking sheet to ensure proper roasting. Store components separately for best meal prep. The sauce can be thinned with more warm water if it thickens.
