  • 1 pint cherry or grape tomatoes
  • 2 tablespoons extra virgin olive oil, divided
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano or Italian seasoning
  • ½ teaspoon kosher salt, plus more for finishing
  • ¼ teaspoon freshly cracked black pepper
  • 4 slices of good crusty bread (like a baguette, ciabatta, or sourdough)
  • 4 ounces creamy goat cheese, at room temperature
  • 1 tablespoon balsamic glaze (or a splash of balsamic vinegar)
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). On a small baking sheet, toss tomatoes with 1 tablespoon olive oil, minced garlic, oregano, salt, and pepper. Spread in a single layer and roast for 12-15 minutes until bursting and caramelized.
  2. While tomatoes roast, brush bread slices with the remaining olive oil. Toast in the oven, toaster, or grill pan until golden and crisp.
  3. Spread a generous layer of room-temperature goat cheese onto each warm toast.
  4. Top each toast with a spoonful of the roasted tomatoes and their juices.
  5. Drizzle with balsamic glaze, add a pinch of flaky salt, and garnish with torn fresh basil leaves. Serve immediately.

Notes

Let goat cheese come to room temperature for easy spreading. Do not overcrowd tomatoes on the baking sheet to ensure proper roasting. Best enjoyed immediately, but roasted tomatoes can be stored separately for up to 4 days.
