  • 1/2 cup creamy almond butter or peanut butter
  • 1/3 cup maple syrup or honey
  • 1/2 cup vanilla or chocolate protein powder (whey or plant-based)
  • 2 tablespoons almond flour or oat flour
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon fine sea salt
  • 1/4 cup mini chocolate chips

Instructions

  1. Line a small baking sheet or plate with parchment paper.
  2. In a medium bowl, whisk together the oats, protein powder, almond flour, and salt.
  3. Add the almond butter, maple syrup, and vanilla extract to the dry ingredients.
  4. Mix with a spatula or hands until a thick, slightly sticky dough forms.
  5. Fold in the mini chocolate chips until evenly distributed.
  6. Scoop tablespoon-sized portions of dough and roll into balls with your hands.
  7. Place balls on the prepared parchment paper and refrigerate for 15-20 minutes to set.

Notes

For a crumbly dough, add an extra teaspoon of maple syrup or nut butter. For sticky dough, dust hands with extra oat flour. Double the batch and freeze for up to 3 months.
