  • 1/3 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1/4 cup ground flaxseed
  • 1/4 teaspoon fine sea salt
  • 1 cup dark chocolate chips
  • 1/4 cup creamy peanut butter
  • Flaky sea salt for sprinkling

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a large bowl, mix 1 cup peanut butter, maple syrup, coconut oil, and vanilla until smooth.
  3. Add oats, flaxseed, and fine sea salt. Fold until fully combined and mixture holds together.
  4. Press mixture firmly and evenly into the prepared pan. Freeze for 15 minutes.
  5. In a heatproof bowl, combine chocolate chips and 1/4 cup peanut butter. Melt in microwave using 30-second bursts, stirring until smooth.
  6. Pour melted chocolate over the chilled base. Spread evenly and sprinkle with flaky sea salt.
  7. Refrigerate for at least 2 hours, or until completely set.
  8. Use parchment to lift the block from the pan. Slice into 12 bars with a sharp knife.

Notes

Use natural peanut butter for best texture. Press the base firmly to prevent crumbling. Store bars in an airtight container in the fridge for up to 2 weeks or freeze for 3 months.
