A creamy, make-ahead breakfast that tastes like dessert. Simple ingredients combine overnight for a grab-and-go meal that is both energizing and comforting.

Ingredients

  • 1/2 ripe banana, mashed
  • 1 tablespoon creamy natural peanut butter
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon pure maple syrup or honey
  • 1/4 teaspoon vanilla extract
  • 1/2 cup old-fashioned rolled oats
  • 1 teaspoon chia seeds
  • 1/2 cup milk of choice
  • Pinch of salt

Instructions

  1. In a 16-ounce jar or airtight container, mash the banana with a fork until mostly smooth.
  2. Add the peanut butter, Greek yogurt, maple syrup, and vanilla. Stir vigorously until well combined and creamy.
  3. Add the oats, chia seeds, and salt. Pour in the milk and stir until no dry spots remain.
  4. Seal the jar tightly and refrigerate for at least 4 hours, or preferably overnight.
  5. Stir well before eating. Add a splash of milk if desired and top as preferred.

Notes

Use old-fashioned rolled oats, not quick oats, for best texture. The mixture will be loose before chilling. For a nut-free version, use sunflower seed butter. Can be stored in the fridge for up to 4 days.
