These vibrant skewers are the ultimate easy, no-cook appetizer for summer gatherings. They feature fresh tomatoes, marinated mozzarella, basil, and blueberries arranged in a festive red, white, and blue pattern. Ready in just 15 minutes, they are a stunning and crowd-pleasing addition to any holiday table.

Ingredients

  • 1 pint cherry or grape tomatoes (red)
  • 8 ounces fresh mozzarella ciliegine (small mozzarella balls)
  • 1 pint fresh blueberries
  • 1 large bunch fresh basil
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic glaze, plus more for drizzling
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Wooden or decorative skewers (6-inch size)

Instructions

  1. Prep ingredients. Rinse tomatoes and blueberries. Pat all components, including mozzarella balls, thoroughly dry with a clean kitchen towel. Pick 24-30 medium basil leaves.
  2. Make dressing. In a small bowl, whisk together olive oil, balsamic glaze, salt, and pepper.
  3. Marinate cheese. Place dried mozzarella balls in a shallow dish. Pour about half the dressing over them, gently toss to coat, and let sit for 5-10 minutes.
  4. Assemble skewers. On each skewer, thread in order: 1 red tomato, 1 folded basil leaf, 1 marinated mozzarella ball, another folded basil leaf, and 2-3 blueberries. Repeat.
  5. Finish and serve. Arrange skewers on a platter. Drizzle with remaining dressing and extra balsamic glaze. Serve immediately.

Notes

For best results, pat ingredients very dry to prevent wilting and diluted dressing. Assemble close to serving time. Components can be prepped hours ahead. Do not freeze.
