  • 4 boneless pork chops, about 1-inch thick
  • 1 cup grated Parmesan cheese
  • 1/2 cup Panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Instructions

  1. Preheat oven to 400°F (200°C). Pat pork chops dry with paper towels.
  2. Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of Parmesan, Panko, garlic powder, Italian seasoning, paprika, pepper, and salt.
  3. Dredge each chop in flour, then dip in egg, and finally press firmly into the Parmesan mixture to coat all sides.
  4. Heat olive oil and butter in a large, oven-safe skillet over medium-high heat. Sear chops for 3-4 minutes per side until golden brown.
  5. Transfer skillet to the preheated oven. Bake for 6-8 minutes, or until internal temperature reaches 145°F (63°C).
  6. Remove from oven, transfer chops to a plate, and let rest for 5 minutes before serving.

Notes

For a crispier crust, do not move chops while searing. Use an instant-read thermometer to avoid overcooking. For gluten-free version, use gluten-free flour and breadcrumbs.
