  • 1 pound thick-cut bacon, chopped
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon dry mustard powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 (16-ounce) loaf French or Italian bread, cut into 1-inch cubes (about 8 cups)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh chives or green onions (for garnish)

Instructions

  1. Cook the bacon in a large skillet over medium heat until crisp. Remove with a slotted spoon to a paper towel-lined plate.
  2. Pour off all but 1 tablespoon of bacon fat. Add diced onion and bell pepper to the skillet. Cook until softened, about 5-7 minutes.
  3. In a large bowl, whisk eggs, milk, heavy cream, dry mustard, salt, pepper, and garlic powder until smooth.
  4. Grease a 9×13 inch baking dish. Spread half of the bread cubes in an even layer.
  5. Sprinkle with half of the cooked bacon, half of the sautéed veggies, and half of both cheeses.
  6. Repeat layers with remaining bread, bacon, veggies, and cheeses.
  7. Slowly and evenly pour the egg mixture over the entire casserole. Press down gently with a spatula to ensure all bread is soaked.
  8. Cover tightly with plastic wrap and refrigerate for at least 8 hours, or up to 24 hours.
  9. When ready to bake, preheat oven to 350°F (175°C). Remove casserole from fridge, discard plastic wrap, and let sit at room temperature while oven heats.
  10. Bake for 50-60 minutes, until the top is golden brown, bacon is crisp, and the center is set (a knife inserted should come out clean).
  11. Let the casserole rest for 10 minutes before slicing. Garnish with fresh chives or green onions.

Notes

For best results, use slightly stale bread. Do not skip the overnight soak. Letting the casserole rest after baking ensures clean slices. Recipe is highly adaptable: swap vegetables, use turkey bacon, or try gluten-free bread.
