One Pot Cajun Pasta

A creamy, smoky, and slightly spicy pasta dish cooked entirely in one pot for minimal cleanup. This version features chicken, bell peppers, and asparagus for a fresh spring twist. It’s a quick and satisfying weeknight family meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 medium yellow onion, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 bunch asparagus, tough ends trimmed and cut into 2-inch pieces
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 pound penne or fusilli pasta
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded Parmesan cheese, plus more for serving
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat. Season chicken with salt and pepper. Add to skillet and cook until browned on all sides, about 5-7 minutes. Remove chicken to a plate.
  2. In the same pot, add onion and bell peppers. Cook for 4-5 minutes until softening. Add asparagus and garlic, cooking for 2 more minutes until fragrant.
  3. Stir in Cajun seasoning and cook for 1 minute to toast the spices.
  4. Add the uncooked pasta and browned chicken back to the pot. Pour in chicken broth, stir well, and scrape up any browned bits.
  5. Bring broth to a boil, then reduce heat to a simmer. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
  6. Reduce heat to low. Stir in heavy cream and Parmesan cheese until melted and sauce is creamy. Taste and adjust seasoning with salt and pepper. Let sit off heat for 2-3 minutes to thicken.
  7. Garnish with fresh parsley and extra Parmesan. Serve immediately.

Notes

For best flavor, use a good-quality Cajun seasoning. If it is very salty, reduce added salt. You can substitute chicken with smoked sausage, shrimp, or chickpeas for a vegetarian version. For a lighter sauce, use whole milk or canned coconut milk instead of heavy cream.
