This no bake berry trifle features layers of tangy lemon cream, sweet ladyfingers, and fresh summer berries. It is a quick and impressive dessert perfect for potlucks and gatherings.

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 8 ounces cream cheese, softened
  • 2 cups heavy whipping cream, cold
  • 1 cup powdered sugar
  • Zest of 2 lemons
  • 1 teaspoon vanilla extract
  • Pinch of pink salt
  • 2 packages ladyfinger cookies
  • 2 tablespoons fresh lemon juice

Instructions

  1. Wash and dry all berries. Toss strawberries, blueberries, and raspberries with 1 tablespoon lemon juice in a bowl. Set aside.
  2. In a large bowl, beat softened cream cheese with an electric mixer until smooth. Add powdered sugar, lemon zest, vanilla extract, and pink salt. Beat until well combined and creamy.
  3. In a separate chilled bowl, whip cold heavy cream on medium-high speed until soft peaks form. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula until no white streaks remain.
  4. In a large trifle dish or glass bowl, spread a thin layer of cream mixture on the bottom. Arrange a single layer of ladyfinger cookies over the cream. Spoon a generous layer of mixed berries over the ladyfingers. Repeat layers until dish is full, finishing with a final layer of cream on top.
  5. Cover with plastic wrap and refrigerate for at least 2 hours, or overnight for best texture.
  6. Just before serving, garnish with fresh berries and a sprinkle of lemon zest. Serve chilled.

Notes

For a dairy-free version, use plant-based cream cheese and coconut cream. For gluten-free, use gluten-free ladyfingers. Add berries just before serving to prevent them from bleeding into the cream.
