These stunning, bite-sized celebrations transform simple cake mix and frosting into elegant, edible confetti. They are a festive, make-ahead dessert perfect for ringing in the new year with minimal fuss and maximum sparkle.

Ingredients

Scale
  • 1 box (15.25 oz) yellow or vanilla cake mix, plus ingredients listed on box
  • 1 can (16 oz) cream cheese frosting
  • 24 oz (two 12-oz bags) white chocolate or vanilla candy melts
  • 1 tablespoon coconut oil or vegetable shortening
  • Gold and silver sprinkles, sanding sugar, or edible glitter
  • Lollipop sticks (optional, for cake pops)

Instructions

  1. Prepare and bake the cake mix in a 9×13 inch pan as directed on the box. Let the cake cool completely in the pan on a wire rack.
  2. Crumble the cooled cake into a large mixing bowl until you have fine crumbs. Add the entire can of frosting and mix with a hand mixer or spatula until fully combined and the mixture holds together like a dough.
  3. Line a baking sheet with parchment paper. Portion the mixture and roll into 1-inch balls, placing them on the sheet. Chill in the freezer for 15 minutes or refrigerator for 1-2 hours until firm.
  4. In a deep, microwave-safe bowl, melt the candy melts with the coconut oil. Heat in 30-second intervals, stirring well between each, until smooth and fluid.
  5. Remove a few cake balls from the fridge at a time. Using a fork or dipping tool, submerge a ball in the melted coating, tap off excess, and place back on the parchment. Immediately decorate with sprinkles while wet.
  6. Let the coated cake balls set at room temperature for about 30 minutes, or chill for 10 minutes to set faster. Serve and enjoy.

Notes

Chilling the cake balls before dipping is crucial for clean results. Candy melts are recommended for easiest coating. Store coated cake balls in an airtight container at room temperature for 3-4 days.
