Mini Brie Bites

These are perfectly portioned, elegant appetizers featuring creamy melted brie and sweet jam in a crispy phyllo shell. They are deceptively simple to make and disappear fast at any gathering. Ideal for parties, romantic dinners, or a quick savory treat.

Ingredients

  • 1 package (15 count) frozen mini phyllo shells, thawed
  • 1 (8 oz) wheel brie cheese, rind removed and cut into 15 small cubes
  • 1/3 cup high-quality fig jam
  • 3 slices prosciutto, optional
  • 1 tablespoon fresh thyme leaves
  • Honey, for drizzling, optional

Instructions

  1. Preheat oven to 350°F (175°C). Arrange thawed phyllo shells on a baking sheet.
  2. If using prosciutto, place slices on a separate parchment-lined sheet and bake for 5-7 minutes until crisp. Cool and crumble.
  3. Place one brie cube into each phyllo shell. Top each with about 1/2 teaspoon of fig jam.
  4. Bake on middle rack for 10-12 minutes, until brie is melted and bubbly and phyllo edges are light golden brown.
  5. Remove from oven. Immediately garnish with crumbled prosciutto, fresh thyme, and a drizzle of honey if desired. Serve warm.

Notes

For a vegetarian version, omit prosciutto. Jam can be substituted with apricot, cranberry, or raspberry preserves. Assemble unbaked bites up to 2 hours ahead and refrigerate before baking. Leftovers can be reheated in a 300°F oven for 5-8 minutes.
