These are the perfect handheld breakfast, made with very ripe bananas for deep, caramelized flavor. They cook quickly in a skillet, are ideal for little hands, and turn a simple ingredient list into warm, cozy memories.

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 3/4 cup milk (whole or 2%)
  • 1 tablespoon melted butter, plus more for cooking
  • 1 teaspoon pure vanilla extract
  • 2 very ripe medium bananas, mashed (about 1 cup)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla until smooth. Mash the bananas directly into this wet mixture until well combined, with a few small lumps remaining.
  3. Pour the wet ingredients into the dry ingredients. Gently stir with a spatula until just combined; the batter should be slightly lumpy. Do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter and let it melt and foam slightly.
  5. Using a teaspoon or small cookie scoop, drop batter onto the hot skillet to form silver-dollar-sized circles, cooking 8-10 at a time.
  6. Cook for 1-2 minutes, until bubbles form on the surface and the edges look set.
  7. Gently flip each bite with a thin spatula and cook for about 1 minute more, until golden brown.
  8. Transfer to a plate and repeat with the remaining batter, adding more butter to the pan as needed.

Notes

For best flavor, use bananas covered in dark speckles. A lumpy batter makes fluffier pancakes. Do not press down on the bites after flipping. They freeze beautifully for quick weekday breakfasts.
