Ingredients

  • 1 block creamy feta cheese (in brine)
  • 1 log soft goat cheese
  • 4 oz sliced manchego cheese
  • 3 oz sliced salami or prosciutto (optional)
  • 1 pint cherry or grape tomatoes
  • 1 English cucumber, sliced into spears
  • 1 bell pepper, cut into strips
  • 1 bunch red grapes
  • 1/2 cup Kalamata olives
  • 1/2 cup Castelvetrano olives
  • 1 cup marinated artichoke hearts
  • 1/4 cup pepperoncini
  • 1 cup hummus
  • 1 cup tzatziki
  • 1/4 cup extra virgin olive oil
  • 4 pita breads, toasted and cut into triangles
  • 1 baguette, sliced and toasted
  • 1 sleeve plain water crackers
  • 1/4 cup toasted almonds or walnuts
  • Fresh dill or mint for garnish
  • 1 tsp dried oregano

Instructions

  1. Place small bowls for hummus, tzatziki, and olive oil onto a large board or platter, spacing them out to create sections.
  2. Arrange the cheeses around the bowls. Crumble the feta, slice the manchego, and place the goat cheese log whole with a knife beside it.
  3. Fold or roll cured meats and place in open spaces. Group fresh vegetables in piles or fans: cucumber spears, tomatoes, bell pepper strips.
  4. Fill remaining gaps with olives, artichoke hearts, pepperoncini, and clusters of grapes.
  5. Scatter toasted pita triangles, baguette slices, and crackers around the edges of the board.
  6. Garnish with fresh herbs, a sprinkle of nuts, and a pinch of dried oregano. Serve immediately.

Notes

All components can be prepped 1-2 days ahead and stored separately. Assemble just before serving. For a vegetarian board, omit the cured meats and add more marinated vegetables or nuts.
