  • 2.5 to 3 pounds boneless, skinless chicken breasts or thighs
  • 1 ½ cups BBQ sauce
  • ½ cup low sodium chicken broth
  • ¼ cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Instructions

  1. Place chicken in the bottom of a slow cooker insert.
  2. In a medium bowl, whisk together BBQ sauce, chicken broth, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, pepper, and salt until smooth.
  3. Pour the sauce mixture evenly over the chicken. Use tongs to gently turn the chicken pieces, coating them in sauce.
  4. Cover with the lid and cook on LOW for 5 to 6 hours, or on HIGH for 2.5 to 3 hours, until the chicken shreds easily with two forks.
  5. Transfer the cooked chicken to a cutting board or large bowl. Shred the meat using two forks.
  6. For a thicker sauce, whisk 1-2 tablespoons cornstarch with 2 tablespoons cold water. Stir this slurry into the sauce remaining in the slow cooker. Turn heat to HIGH and cook for 10-15 minutes until thickened.
  7. Return the shredded chicken to the pot and stir to coat in the sauce. Serve immediately or cool for storage.

Notes

Chicken thighs yield a richer, more forgiving shredded chicken. For a saucier result, do not skip the cornstarch slurry step. Always taste your BBQ sauce first and adjust seasonings, as brands vary in sweetness and saltiness.
