This is the ultimate time-saving comfort food. Simple pantry ingredients simmer together into a deeply flavorful, creamy tomato sauce where the pasta cooks directly in the pot. Best of all, you can make it entirely ahead of time for a stress-free dinner that feels like a reward.

  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 pound ground Italian sausage (mild or hot)
  • 1 (28-ounce) can crushed tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 12 ounces short pasta like penne, rigatoni, or fusilli
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • Fresh basil or parsley, for garnish

Instructions

  1. In a large Dutch oven or pot, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 30 seconds until fragrant.
  2. Add ground sausage. Break it up with a spoon and cook until no longer pink and nicely browned.
  3. Pour in crushed tomatoes, chicken broth, heavy cream, oregano, basil, and red pepper flakes (if using). Stir well, scraping up browned bits. Season with salt and pepper.
  4. Add the uncooked pasta and stir to submerge. Bring to a simmer, then reduce heat to medium-low. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is al dente and liquid is mostly absorbed.
  5. Remove pot from heat. Stir in grated Parmesan cheese until melted and sauce is creamy. Taste and adjust seasoning.
  6. Garnish with fresh herbs and extra Parmesan. Serve immediately, or let cool completely and store for a make-ahead meal.

Notes

For a make-ahead meal, complete the recipe and store cooled pasta in an airtight container for up to 4 days. Reheat gently on the stovetop with a splash of broth or milk to loosen the sauce. Use freshly grated Parmesan for the smoothest, creamiest result.
