  • 1 box (15.25 oz) white or yellow cake mix, plus ingredients listed on box
  • 1 cup boiling water
  • 1 cup cold water
  • 1 box (3 oz) strawberry Jell-O gelatin
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 1 container (8 oz) frozen whipped topping, thawed
  • Fresh strawberries or sprinkles for garnish (optional)

Instructions

  1. Prepare and bake the cake mix according to package directions in a 9×13-inch pan. Let cool completely in the pan on a wire rack.
  2. Use the handle of a wooden spoon or a large fork to poke holes all over the cooled cake, about 1 inch apart and most of the way to the bottom.
  3. In a medium bowl, whisk the Jell-O powder with the boiling water until fully dissolved. Stir in the cold water.
  4. Slowly pour the liquid gelatin mixture over the cake, aiming to fill the holes. Let it soak in.
  5. Cover the pan loosely with plastic wrap and refrigerate for at least 3-4 hours, or ideally overnight.
  6. Just before serving, prepare the frosting. In a large bowl, whisk the pudding mix with the cold milk for 2 minutes until it thickens. Gently fold in the thawed whipped topping until smooth.
  7. Spread the frosting evenly over the chilled cake. Garnish with fresh strawberries or sprinkles if desired. Slice and serve.

Notes

Ensure the cake is completely cool before poking to prevent crumbling. For clean slices, chill the cake overnight. Customize with different Jell-O and cake mix flavors for various holidays.
