  • 1/2 teaspoon salt
  • For the Cream Cheese Frosting:
  • 8 ounces full-fat cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1 pinch salt
  • For the Fruit Topping:
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 kiwi, peeled and sliced
  • 1/4 cup apricot jam or apple jelly, for glazing (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make the crust: In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla until combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients, mixing on low until a soft dough forms.
  4. Press the dough evenly into a 12-inch pizza pan or a parchment-lined baking sheet. Create a slightly raised edge. Prick the dough all over with a fork.
  5. Bake for 12-15 minutes, until edges are just beginning to turn light golden brown. Let the crust cool completely on the pan.
  6. Make the frosting: In a medium bowl, beat the softened cream cheese and butter together until smooth and lump-free.
  7. Gradually add the sifted powdered sugar, vanilla, and salt, beating until the frosting is silky and spreadable.
  8. Assemble: Once the crust is completely cool, spread the frosting over it in an even layer, leaving a small border.
  9. Arrange the prepared fresh fruit in a decorative pattern over the frosting.
  10. For a glossy finish, gently warm the apricot jam with a teaspoon of water and lightly brush it over the fruit (optional).
  11. Refrigerate the assembled pizza for at least 30 minutes before slicing and serving.

Notes

Ensure the crust is completely cool before adding frosting to prevent sogginess. Pat fruit dry thoroughly after washing. The entire dessert can be assembled a day ahead. For gluten-free, use a 1:1 gluten-free flour blend.
