This cheerful dessert is edible sunshine on a plate. A buttery sugar cookie crust is topped with fluffy cream cheese frosting and a vibrant array of fresh fruit, perfect for stress-free entertaining.

  • 1 (16.5 oz) roll refrigerated sugar cookie dough
  • 1 tablespoon all-purpose flour
  • 1 (8 oz) package full-fat cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon pure vanilla extract
  • 3 cups powdered sugar
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 2 kiwi fruits, peeled and sliced
  • 1/2 cup mandarin orange segments, drained
  • 1/4 cup seedless red grapes, halved
  • 1/4 cup apricot jelly, warmed (optional)

Instructions

  1. Preheat oven to 350°F. On a floured surface, press or roll cookie dough into a 12-inch circle, 1/4-inch thick. Transfer to an ungreased pizza pan. Prick dough with a fork.
  2. Bake for 10-12 minutes until edges are light golden. Let crust cool completely on the pan.
  3. For frosting, beat cream cheese and butter until smooth. Beat in vanilla. Gradually add powdered sugar, beating until fluffy.
  4. Spread frosting evenly over cooled crust. Arrange prepared fruit on top. Brush with warmed jelly if using.
  5. Refrigerate for at least 30 minutes before slicing and serving.

Notes

Ensure crust is completely cool before adding frosting to prevent melting. Fruit must be patted dry. Entire pizza can be assembled and refrigerated up to 24 hours ahead.
