This rich and cheesy pasta bake is the ultimate comfort food and time-saver. Assemble it ahead of time for a stress-free dinner that fills the kitchen with the scent of garlic, herbs, and melted cheese. It’s a versatile, crowd-pleasing dish that tastes even better the next day.

Ingredients

  • 1 pound short pasta (like penne, rigatoni, or ziti)
  • 1 tablespoon olive oil
  • 1 pound ground beef (or Italian sausage)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (24-ounce) jar marinara sauce
  • 1 (15-ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain, toss with a drizzle of oil, and set aside.
  2. Heat olive oil in a large skillet. Add ground beef and onion. Cook until beef is browned and onion is soft, about 7-8 minutes.
  3. Stir in garlic, oregano, basil, and red pepper flakes. Cook for 1 minute until fragrant.
  4. Pour in marinara and crushed tomatoes. Season with salt and pepper. Simmer for 5-10 minutes.
  5. Preheat oven to 375°F (190°C). In a large bowl, combine the cooked pasta and meat sauce.
  6. In a 9×13 inch baking dish, spread half of the pasta mixture. Dollop ricotta over it, then sprinkle with 1 cup mozzarella.
  7. Top with remaining pasta mixture. Finish with the remaining 1 cup mozzarella and the Parmesan cheese.
  8. Cover with foil and bake for 20 minutes. Uncover and bake for 10-15 more minutes until cheese is bubbly and golden.
  9. Let rest for 5-10 minutes before serving. Garnish with fresh herbs.

Notes

For make-ahead, assemble and refrigerate for up to 24 hours before baking; add 5-10 minutes bake time if cold. Do not overcook the pasta initially. Let the sauce simmer to develop flavor. Let the bake rest before serving for best texture.
