A quick 15-minute marinade infuses shrimp with bright lemon and fresh herbs before a fast grill. This dish is perfect for busy weeknights or summer gatherings, delivering juicy, char-kissed shrimp in under 30 minutes.

  • 1 pound large shrimp (21-25 count), peeled and deveined
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: pinch of red pepper flakes for heat

Instructions

  1. In a medium bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, parsley, oregano, salt, and pepper. Add red pepper flakes if desired.
  2. Add shrimp to the bowl and toss gently to coat. Cover and refrigerate for exactly 15 minutes. Set a timer to avoid over-marinating.
  3. Preheat grill to medium-high heat (about 400°F). If using a grill pan, heat over medium-high heat for 3-4 minutes.
  4. Thread shrimp onto skewers (soak wooden skewers in water for 20 minutes first) or place directly on grill grates. Grill for 2-3 minutes per side until pink and opaque with slight char marks.
  5. Remove shrimp from grill and let rest for 2 minutes. Squeeze extra lemon over top and sprinkle with fresh parsley before serving.

Notes

Do not marinate shrimp longer than 15 minutes, as the lemon acid can cook them. Pat shrimp dry before marinating for best char marks. For a Mexican-inspired twist, use lime instead of lemon and cilantro instead of parsley.
